2017 Ancient Peaks Oyster Ridge

This dominant Cabernet Sauvignon (80%) cuvée is the flagship bottling from Ancient Peaks Winery. The designation of Oyster Ridge is derived from the numerous white oyster fossils found in the soils of the estate Margarita Vineyard. The presence of these shells lends to a sub-soils that are rich in calcium. This wine spends 23 months in French and American Oak.

The dark ruby essence of this wine is a potpourri of crème de cassis and wild mixed berries. They are intermixed with balsamic, espresso and fresh cut cedar. There is an underpinning of limestone and crushed rocks, which are contributed by the soils at this estate. The core retains a plushness and creamy personality throughout, leading to a finish that is well balanced and persistent.
