In 2017 The Farm Winery produced 137 cases of the Cardinal Cabernet Sauvignon. This beautifully made wine is 100% Cabernet Sauvignon, from Old Bailey Vineyard, planted in 1964. The Cardinal wine is made only in the best vintages. The color is deep ruby with slightly lighter edges and glistening viscosity in the glass. The aromas revealed to me what a special wine this is. I was reaching for words and metaphors to describe the aromas as I was swirling the wine in the glass. Red and dark blue fruit, notably blueberry, cassis an explosion of aromas distinctive personality and pure to the varietal and a sense that this could be one of the best wines made in Paso Robles. The palate is so focused that it draws you in and won’t let you out. There is a sensation of mouth filling fresh fruit, silky tannins, and the perfect amount of acidity and texture that amplifies all your sensations. All these elements contribute to a finish I can only describe as incredible length and persistence with subtle minerality. The Farm Winery Cardinal is one of those few special wines that gives the combination of beautiful color, pure delicious flavor and a finish that is so harmonious that it takes your senses to a whole other level.
