The 2021 Pietradolce Etna Bianco is made from 100% Carricante. The color is a pale straw that glistens in the glass. Lively, fresh aromas of yellow fruit, lemon peel, a hint of herbs and minerality that are pronounced. On the palate the Etna Bianco has a chalky texture, fresh acidity but maintains beautiful balance. I found this combination of flavor and texture to be delightful and delicious. The bright acidity lifts this wine to a mouthwatering feel and lengthy finish. I completely enjoyed this wine. It begs to pair with Mediterranean seafood dishes.
