Mionetto Valdobbiadene Superiore di Cartizze DOCG

Mionetto was founded in the heart of the Prosecco region of Valdobbiadene by winemaker Francesco Mionetto in 1887. They were innovators in introducing autoclaved fermentation in temperature controlled stainless steel tanks, rather than in bottles. This process maintained the freshness and aromas within the sparkling wines of Prosecco.

This bottling is part of Mionetto’s luxury collection. The grapes are sourced from a 246 acre parcel on the steepest hills of Valdobbiadene and harvested in the second half of September. They must is separated from the skins after soft pressing of the grapes. Secondary fermentation occurs in temperature controlled stainless steel tanks. The wine is 11% alcohol with 5.8-6 g/l of acidity and 24-26 g/l of residual sugar.
This wine is brilliant pale yellow with a persistent, fine effervescence. There is a whisper of apricot peel, quince and Asian Pear in the background. The fruits are juicy and energetic throughout the length of the palate. All these elements are balanced against a stream of finely chiseled acidity that fades into a balanced finish.
